Sostenibilità: la mia verità

Si, la verità. Nient’altro che la verità. Perlomeno la mia, ovvio.

L’idea mi venne in mente lo scorso gennaio, quando alle prese con la presentazione per il mio intervento al TEDxBocconi, ho dovuto ripercorrere a ritroso più di 3 lunghi anni. Al TED, avrei dovuto parlare delle mie esperienze professionali in relazione con la sostenibilità, partendo dal progetto di ECOFFEE. Chi ha parlato in pubblico, senza essere un oratore e chi ha domestichezza con le presentazioni in Power Point, sa benissimo quanto sia difficile riassumere e racchiudere più di 3 anni di esperienze in 15 minuti e 15 slides a disposizione. Se poi, come detto nel post relativo, oltre all’emozione, ci si mette anche l’influenza …

Comunque, l’idea maturata nel tempo, è quella di scrivere per benino le mie esperienze, i progetti, le persone e le aziende incontrate e tutto quello che mi è accaduto nel bene e nel male, fino a questi giorni. In poche parole, esplicitare al massimo il mio intervento al TED, raccontando aneddoti e dettagli. Si, come detto, nel bene e nel male.

Perchè? Perchè la sostenibilità, quella vera, non è quella che si pensa o quella che si legge sui giornali o su internet. Non è quella che vi propinano le aziende dagli slogan tutti “green oriented” o i manager dai titoli inventati e posticci. Probabilmente non sarà nemmeno quella che vi racconterò io. Starà a voi giudicare, ma vi assicuro che scoprirete cose interessanti.

Quindi? Se avrete pazienza e voglia di leggere il mio punto di vista, prossimamente pubblicherò “svariati capitoli” sulle mie esperienze personali e la sostenibilità. Spero di riuscire ad essere abbastanza costante, perchè fino a febbraio ho già l’agenda abbastanza fitta di impegni importanti e viaggi all’estero e soprattutto, spero vi interessi.

Un ultima premessa: il mio blog è impostato sia per l’italiano che per l’inglese, a seconda di cosa voglio pubblicare e del pubblico a cui mi rivolgo. I post sulla sostenibilità saranno in italiano. Capirete da soli il perchè.

Ixsir it means Elixir: in vino veritas

I am writing from Beirut, the very active and beautiful Lebanese capital.  I’m here to visit the Horeca Exhibition, to meet with some potential clients and to attend to BIFEX where I’ve been invited as speaker.

Today I wish to share with you a great experience I had last Sunday in the suggestive country side. I had the pleasure to visit a wonderful vineyard and winery.

“The vision behind the wines IXSIR is to reveal the best local Lebanese sometimes forgotten for generations. Created by friends sharing a common passion for wine and Lebanon IXSIR is the culmination of their dream. They managed to develop fine wines that will be forever associated with the land of their ancestors. The wines IXSIR combine a rich variety of grapes grown on land carefully selected to symbolize the diversity of Lebanon. Batroun, north to Jezzine, south through the Bekaa Valley to the east, the vineyards chosen include everything the country has to offer. Winemaking and aging in cellars are above which rests the mansion. Located on the hills of Batroun, this bastion of regional heritage dates from the 17th century and overlooks a modern vineyard whose heart is sustainability priorities. It combines all the resources of the earth to give birth to wines that reveal the secrets”.

Trust me, the wine has a great taste but what surprised me the most is that this winery was selected by the CNN as one of the greenest building in the world; and what a building.

Non predere il treno del “green”

Il Franchising, come modello di business, è spesso associato a grandi marchi di catene multinazionali con prodotti industriali, quindi standardizzati, e con relativa assenza di legame e valorizzazione dei prodotti artigianali.

Ma qualcosa sta cambiando anche perché il gradimento del consumatore finale verso i prodotti “green” sta aumentando notevolmente.

Prendiamo in esame il settore della ristorazione.

Sempre più persone consumano pasti fuori casa (trend in aumento in Italia rispetto all’inversione europea) con la conseguenza che la ristorazione continua a essere un settore produttivo in costante espansione con necessità, da un lato, di promuovere e assicurare la somministrazione di cibi sani e di buona qualità, dall’altro, di un sempre maggiore utilizzo di prodotti d’origine controllata, certificati e, dove possibile, di prodotti biologici al fine di non impattare sull’ambiente e sulla salute delle persone. In Italia, come soprattutto all’estero, stanno nascendo progetti di caffetterie e bistrot eco-friendly. Formule retail diverse dalle classiche, dove l’esperienza percepita dal cliente è sicuramente più positiva e meno “commerciale”. Si tratta di una nuova sfida per la ristorazione: lo sviluppo sostenibile in una gestione di eco-efficienza al motto di “Dimmi cosa mangi e ti dirò chi sei”. Prendere consapevolezza del fatto che esiste una forte correlazione tra cibo, ambiente e salute può portarci a riprogettare il modello gestionale della ristorazione in ottica “green”. Un fenomeno che vede l’affermarsi di un consumatore più consapevole e più attento alla qualità non solo degli alimenti. Tale fattore è da una parte strettamente legato all’investimento sul capitale umano e sul livello di istruzione, dall’altra al verificarsi negli ultimi venti anni, non solo nel nostro Paese, di una serie di scandali alimentari (“vino al metanolo”, BSE meglio cono-sciuta come “mucca pazza”, “pollo alla diossina”, ecc.) che hanno avuto come conseguenza una maggiore attenzione del consumatore ai rischi alimentari, lo hanno reso più attento alle diverse forme di informazione e di etichettatura degli alimenti. Il tutto combinato a una sempre più crescente “coscienza ecologica”.

1Già attiva nel campo della zootecnia, la normativa prevista dal Regolamento CE n.178/2002 per la tracciabilità dei prodotti sarà nei prossimi anni un punto importante anche per la ristorazione (movimentazione, stoccaggio e trasformazione degli alimenti nel punto vendita, ecc…). Gestire la tracciabilità completa, può essere difficoltoso anche se oggi nuovi software permettono un’estrema automazione per essere in regola con il regolamento. È possibile così acquisire il carico di materie prime manualmente o grazie ai barcode, assegnare un codice di lotto, gestire il magazzino e scaricarlo in automatico, seguendo le produzioni della giornata. Un buon sistema di tracciabilità, oltre che ad ottemperare alle normative comunitarie, permette un controllo totale della propria attività produttiva azzerando quasi completamente gli errori dovuti a merce non utilizzata o acquisti sovra-dimensionati.

Anche le catene e le reti di franchising del settore food sono ben consapevoli che non possono e non potranno esimersi da tali passaggi e da tempo molti marchi a notorietà internazionale si sono attivati in tal senso, ognuno con iniziative diverse. Infatti, proprio per il loro sviluppo e la loro crescita, in termini di tempo e spazio, le catene possono risultare alquanto “impattanti” su tutto il settore green. Tralasciando di descrivere nel dettaglio in che cosa consiste un locale ecofriendly e di analizzare tutte le “buone pratiche” che deve rispettare per essere definito tale, diciamo soltanto che gli impatti ambientali nel settore della ristorazione sono molteplici: dai consumi energetici a quelli idrici, dal trasporto degli alimenti, al consumo dei prodotti, siano essi per la pulizia, per la
promozione, ma anche per la stessa somministrazione pasti. Inoltre, non è possibile non citare, infine, la produzione
dei rifiuti. In sintesi, questi i punti principali affrontati da chi si è già messo all’opera: riduzione delle emissioni
di CO2, approvvigionamenti da forniture e filiere sostenibili, riduzione dei consumi, riduzione e corretta gestione dei rifiuti, utilizzo di attrezzature ecocompatibili e certificate, utilizzo di arredi realizzati con materiali e prodotti certificati.

3Ma che cosa significa tutto questo quando si è al punto zero, ovvero quando si inizia a pensare o, meglio, a progettare un locale di ristorazione? L’approccio è completamente diverso, così come è diverso il know how specifico mentre l’esperienza può aiutare, soprattutto per sfatare il falso mito che sostenibile è sinonimo di costoso.

Inoltre, la direttiva sull’eco-design nota come EuP (Energy using products) ha istituito un quadro per la progettazione ecocompatibile di un negozio, come il recupero, il ciclo di vita del prodotto, il loro futuro smaltimento o recupero. Le varie iniziative delle catene non sono un fenomeno da sottovalutare, in quanto, così facendo, oltre a rinnovare il proprio know how rispetto alla formula originale, potranno rappresentare un esempio per il settore, cambiandone in meglio l’atteggiamento, le procedure, i servizi e naturalmente i prodotti a vantaggio della collettività. Infine, ma non meno importante, lo sviluppo di una catena in franchising di un concept basato sui principi della sostenibilità aiuterà la stessa a diffondersi maggiormente e più rapidamente.

I can already think about the same concept applied also to our business. Whatever will be an hotel, a restaurant or just a coffee shop, this could be a very revolutionary equipment that could solve lots of environmental and economic problems.

That’s for sure: I will surely add it to the ECOFFEE equipment list.

This cool concept could be the best way to sensibilities the people about sustainability and responsibility, especially young generation, enabling you to add a real vegetable garden to your apartment kitchen or coffee shop, without too much of trouble!

How to make your hotel greener: 40 easy steps to follow

Hotel Management Asia recently published a list supplied by Pineapple Hospitality we found really interesting and useful if you aim to make your hotel a greener one.green_hotel_image

1. Programmable and digital control of your HVAC systems: Use electronic thermostats in guestrooms with pre-set settings to minimize energy consumption.

2. Key Card Energy Management System turn off lights when guests are not in room.

3. A linen and towel reuse program is a must.

4. Consider either Organic Cotton Linens or Linens made with Tencel+Plus™

5. Ozone laundry systems reduce the Water, Energy and Chemicals used by the wash.

6. Advance Laundry Solutions also has new drying technology that reduces energy consumption by up to 90%, yet requires no vent and extends textile life.

7. In-room recycling.

8. Recycling containers in all public areas.

9. Use compact florescent light (CFL) bulbs and energy-saving lighting fixtures

10. Install motion sensor-activated lights in areas that are infrequently used.

11. Use natural light as much as possible in common areas, restaurants and meeting rooms. Consider changing window coverings or installing skylights to improve to reduce artificial lighting.

12. “Green roofs” create energy savings by acting as super insulators, keeping buildings warm in the winter and cool in the summer. They also serve as a storm water management systems, catching pollutants as they drain off the roofs.

13. If not plants, how about installing solar panels on your roof?

14. Improve window and door seals. You will save on heating and cooling costs, reduce noise levels and decrease dust circulation.

15. Improve air quality by circulating outside air into guestrooms.

16. Identify something that is being discarded and find re-use for that item – such as reusing old tablecloths to make napkins.

17. Turn off all lighting/equipment/computers when not in use.

18. Make guest registration paperless.

19. Scan and email instead of fax.

20. When you do need to print, use recycled paper, soy-based inks and print double-sided.

21. Biodegradable 100% recycled room keys.

22. Use biodegradable and all-natural bathroom amenities, such as soaps, lotions, shampoos and conditioners.

23. Use bathroom amenity dispensers rather than individually packaged amenities.

24. Buy amenities, food and cleaning products in bulk to reduce waste and transportation costs.

25. 1.6 gallon per flush toilets installed in all rooms and guest areas.

26. Low-flow faucet aerators installed throughout the building and in all guestrooms.

27. Use of environmentally friendly (low VOC) paints.

28. Check with your pest management company to ensure use of integrated pest management (IPM) products and policies that are environmentally friendly and reduce the use of chemicals.

29. Use groundcover and drought-resistant plants to reduce amount of mow-able grass on your properties.

30. Go Smoke-Free!

31. Serve meals buffet style to reduce packaging and waste.

32. Use electric buffet warmers rather than canned fuels.

33. Serve water by each guest’s request rather than pre-pouring.

34. Stop using plastic water bottles.

35. Offer guests bicycles for short trips instead of driving.

36. Consider hybrid or electric vehicles for your fleet.

37. Used recycled rubber for the cardio room floor, or recycled tiles for pool floors.

38. Upcycle or recycle items you no longer need or use for their original purpose – such as in-room furnishings.

39. Give leftover food and/or amenities to charities.

40. Plant a garden and harvest organically-grown vegetables for your restaurant.

Anuga, the Fair

Anuga, the world´s leading food fair for the retail trade and the food service and catering market, will take place in Cologne (Germany) from next October 8 to 12. My scheduled attendance has been cancelled because I have been urgently required to fly to Dubai to discuss new DESITA and ECOFFEE projects.  As I wrote to all those who contacted me privately to set up meetings at Anuga, I will be more than happy to meet you during the upcoming events, just contact me at norman|at|ecoffee.it

Anuga this year this fair is expected to be very interesting not only for the many – 6.500- exhibitors but for the collateral events that will take place during the 4 days. I am particularly interested in the Wellfood Forum – showcasing the latest trends and the newest developments from all over the world in the areas of Wellfood and Functional Food – and the Fully Organic Special Show.

Organic foods will be expertly presented for the fourth time since Anuga 2003, in cooperation with the editors of bioPress. In addition to the approximately 1,600 exhibitors offering organic products and the more than 300 exhibitors of exclusively organic products in the Anuga Organic hall, visitors will also find more than 2,000 organic products for the food retail trade concentrated in the “Fully Organic” special show.

“Fully Organic” is now becoming the future agenda of food retail traders. And nothing reflects the latest developments in the organic product range of the retail food trade as clearly as the special show at Anuga Organic.

Fairtrade Italia and ECOFFEE: a sustainable partnership for a better future

I am very happy to announce that last Tuesday, July 19th DESITA and Fairtrade Italia have signed a bilateral agreement providing mutual support for the dissemination of the principles of environmental sustainability, fair trade and social responsibility on the entire Italian market  through a focus on in-store actions.

DESITA, thanks to its ECOFFEE project, will promote Fairtrade products and will support  Fairtrade licensees through its wide range of retail-oriented services and solutions: from architectural design, branding, process analysis, franchise creation. The Fairtrade certified products will also find a privileged placement among the products available at the ECOFFEE franchise cafés.

On the other hand, Fairtrade Italia has committed to share with its stakeholders- Retail business licensees, Association members and consumers – all the services offered by DESITA and   ECOFFEE.

“I am very happy to have reached this agreement,” states Paolo Pastore, Managing Director of Fairtrade Italia “This agreement is very different from the usual one and I am  sure that it will bring a much wider scope and visibility to Fairtrade certified products, the only Fair Trade certification that has deserved consumers’ trust all around the world. “

Being supported by such an important organization as Fairtrade Italia has once again confirmed that what I have created, the ECOFFEE service platform, is a requirement for a better future.This gives me the strength to keep on working in what is still an immature industry, that of sustainability in the Italian Retail and Horeca panorama. I am convinced that this partnership will actually contribute to the creation and dissemination of a more responsible consumption on the Italian market.

Italians and sustainability in the retail business: the buzz is online!

Italians speak about sustainability online.This is the result of a recent survey led by Blogmeter from October 1st, 2010 to January 31st, 2011 recording approximately more than 9 thousand post about environmental sustainability related to the major retail chains. Social media proved to be the ideal and most followed communication tool  to promote eco- initiatives, facilitating the construction of  a real “green image” for the retail business sector.

Retailers mentioned by Italians on online conversations about sustainability

When it comes to environmental sustainability Coop and Ikea and are the most discussed with over 40% of the citations. This happened for example with the Sportello Ambiente initiative,  a collaboration between Ikea and Legambiente to offer advice to consumers about home energy efficiency, and with the Coop campaign to promote the consumption of tap water in place of the bottled one.

In general, web users are showing an increaside sensitivity to organic and low-
environmental impact products:  in the online communities dedicated to women, users positively report about the presence of automatic distributors to refill detergents inside the supermarket. Retailers brands are the most mentioned ones, most widely quoted and commented by users because always available on the shelf – like Esselunga Bio, Bio of Auchan, Coop Viviverde. Lidl, for example, is particularly discussed for its range of ecological detergents W5 (on 42 over 199 posts mentioning the retailer) considered to be of good quality and highly recommended among users.

The network also tells us that attention to a more responsible consumption is steadily increasing and influencing the purchase process in different ways: users are more sensitive to labels and the presence of the Ecolabel certification is considered increasingly important for those who are looking for products with a low environmental impact.

The research also showed that a balanced relationship between quality and price of organic and /or eco products is a key criterion in the buying process: very often consumers who are interested in green products do desist because selling prices are too high. (Source: GDO Week)

A greener wine for happier wine connaisseurs

Vinitaly 2011 ended with excellent results, an increase of 10% in visitors confirmed once again that good wine never goes out of fashion. Good wines, not only for the undisputed quality of the products, but also because of its being good for the environment and  for the community. The bio wine, produced by following the precepts of organic agriculture, with no sulfur and, above all, free of chemical residues and pesticides, is not new thing on the market.
But what is innovative is that sustainability in the wine industry is becoming more and more popular and required by wine consumers. A recent WineNews / Vinitaly survey showed that “green” labelled wine, the one ensuring the environmental commitment of the winery, would be an added value for 55% of the interviewed. The survey results were collected in a sort of handbook of the sustainable wine drinking, whose must are: locally grown wine, organic and biodynamic viticulture, ISO 14001 or EMAS certified wineries, lighter bottles, recycled paper labels, use of recycled or recyclable packaging, low-impact in terms of carbon footprint of production.
There are several Italian producers who understand the importance of sustainability to adequately respond to consumer demands. Zonin for instance, is already eliminating herbicides, fertilizers and chemical treatments, using only those permitted by the organic or biodynamic agriculture. “Approaching a more sustainable production also requires us to use a more precise viticulture, an aspect that we can no longer overlook in the vineyards where we bring this new philosophy. A lot of attention is paid to the fertility of the soil which must not only be maintained but improved over time without the use of chemicals, “says Franco Giacosa, technical director of the Zonin company in Gambellara (Vicenza, Italy).
It is not a suprise to find the Zonin name amont the list of the 73 Italian companies participating to the Bayer CropScience Magis project  for social and economic sustainability in the wine industry: from Caviro to Planeta,  Barone Ricasoli and Castello Banfi, to name some of the companies appearing in the Magis list. The aim of the Magis project is to provide companies with a common objective and measurable parameters and elements of communication to meet the demands of industry and consumers in terms of sustainability.
Obviously, the added value of a wine produced accordingly to the Magis criteria, will be lost if the supply chain and bars, restaurants and hotels do not abide to the same sustainable and responsible criteria. And this is what the ECOFFEE project is working at!
